This course provides Employee Certification for Wholesale and Retail Operations training. It should be taken by those who are or plan to be retail food establishment employees who handle and serve food. Food Handler Certification is usually used in volume by companies or schools. The cost per certificate is negotiable when the volume is above 25 persons.
This certification is good for companies and schools training in the basic level of food safety. Our course gives you the basic times and temperatures and food safety and hygiene protocols, and is a must for everyone who works in a food environment. Most food production companies use the same methods used in the Retail Food environment, but yours may require less processes and much larger volumes.

The study materials covered in this self-paced course provide the information that you need to know in order to understand food safety concepts and terminology. |
Wholesale and retail food service owners, managers, and supervisors have the responsibility to identify food hazards. Employees should expect owners and managers to establish food safety-assured policies, procedures, and standards that ensure safe food production and service. Employees should expect to be trained and coached so that their chances of making a mistake during food handling are minimal.
If a mistake is made or a dangerous situation arises, you will know how to take corrective action and/or handle the emergency.
The online coursework provides 14 lessons of study materials, one to two quizzes per lesson, a review, and appendices. Lesson topics include:

- receiving, inspecting & storing
- cleaning & sanitizing
- handling, preparation & serving

The appendices include a list of definitions providing acronyms and food safety-related words and phrases; an Inspection Form; a Kitchen Design Checklist; a Food Process Temperatures & Times Chart; and a Biological Hazards chart providing information about key foodborne illness microorganisms (bacteria, viruses,
and parasites) in relation to retail food handling, preparation, etc.
After completing your studies at your own pace, you will then be prepared to take RFA's final exam. Upon passing the exam, you will become Wholesale & Retail Food Alliance certified and you will be prepared to take the Thomson Prometric (formerly Experior Assessments) CPFM test or the test for ServSafe manager's certification, if you choose to do so.

Personal HACCP certification. This is certification for the individual. We will train and certify you to be able to write, maintain and make changes to HACCP plans. You should then be able to see the weakness in a poorly written HACCP plan and make the necessary corrections.
We make more than one training option available to you that best fits your personal preference:
- in-person HACCP Workshop training at our Florence, Oregon; Portland, Oregon; or St. Paul, Minnesota facilities, at your wholesale or retail facility's location, or at seminars or events worldwide.
- online HACCP training which includes studying and testing your food safety knowledge before teaching you how to write and implement your HACCP plan. Basic science is covered in this course. After you finish studying, RFA issues you a Certificate of Completion of coursework materials. When you have completed writing your HACCP plan, we will review and approve it. Then, we will issue you an RFA-approved Certificate good for five years.
RFA will first train you for the national standard of the manager, chef, and supervisor food safety training (see FSC course details above). You will need to pass this test before beginning your studies for HACCP certification. We will then provide you with:
- documentation to study containing the microbes and the HACCP processes.
- a blank template for you to edit and create your own HACCP plan which will work great for retail or just about any wholesale operation.
- other custom templates are available if you need one
You fill in the blanks, edit what is needed in the template, and send it back to RFA. Upon approval of your HACCP plan, we will issue your certificate.
The first attempt on the online coursework will generate a certificate of completion stating you have taken the course. This is usually good enough for an inspector requiring a HACCP training. But, we go further. RFA will issue you another certificate good for five years when we have approved your HACCP plan.

HACCP2, Wholesale & Retail Food Alliance’s Advanced HACCP Course, is for those who already have HACCP certification, work with HACCP Plans in industry, or need to inspect, oversee, maintain or understand HACCP systems or plans. It includes training in Inspections and Audits. The course requires previous HACCP certification or a working knowledge of HACCP and its controls.
The course is great if you want to refine processes or understand new and different process controls, making YOU the process authority. It is good for Health Inspectors, not limiting inspection to just floors, walls and ceilings. Most audits are not as focused on processes, so this course will make you a professional and confirm your processes through these audits. It will help you to not only pass inspections but also provide you with the tools leading to continual improvement through 0 defects, making YOU the HACCP authority.

This course has been more popular than we ever expected. In order to become a trainer, you need to have taken the HACCP 1 workshop in St. Paul, Minnesota, Florence, Oregon or Portland, Oregon. After you have taken the HACCP workshop training, you need to plan on a second partial day for the Train the Trainer portion. The course will allow you to train others in basic HACCP principles. It will give you the tools and materials to train your staff in all they need to know about HACCP and Food Safety for the Manager, Chef and Supervisor.
The course includes teaching tools like Glo-Germ (Dr. Snyder's economical use of the glo germ product), a high powered Ultra Violet flashlight/torch, and more.

To keep your RFA certification current, you will need to successively recertify by the time 5 years are up. Please check your RFA certificate re the expiration date and leave yourself enough time to brush up on our coursework before retesting online takes place. Upon successfully passing the test, we will send you your Recertification Certificate.
